Taste

The fine, precise bubbles are the prelude to a flavor that can only belong to our Sorbara: lively, expressive, the fruit intact, the acidity sharp, the cleanliness extraordinary, and everything more intense, more defined, more vital. The art of simplicity.

Winemaking

The bunches are hand-selected and harvested into crates. Immediate soft pressing takes place to extract and preserve the aromatic profile of the original grapes, followed by several hours of maceration on the skins to extract color and complex aromas. The free-run must is fermented in temperature-controlled stainless steel tanks to develop the unmistakable character of our Sorbara grapes. The wines are then selected for blending and bottle-fermented for 16-18 months, followed by disgorgement and dosage.

Identity

Quintopasso Maestro is the latest creation from the Quintopasso universe, closing the circle. We began with the Sorbara Rosé Metodo Classico and then moved on to the Lambrusco di Sorbara Metodo Classico, a version that speaks of fruit, freshness, and integrity. It captures the full soul of Sorbara, its complex simplicity: essential, transparent, and captivating. Like the sensation that lingers after an April shower, capable of enhancing every aroma, uniting earth and sky.

Pairings

The Quintopasso Maestro Brut It is a Classic Method with character, seamlessly combining elegance and depth. It shines alongside oysters and shellfish, and proves equally compelling with Catalan lobster. Confident and versatile, it pairs beautifully with classic or gourmet pizzas, balancing the brightness of tomato sauce with poise. Its most authentic expression, however, is next to great Emilian cold cuts, an homage to the land where it was born.
