Taste

The palate is dominated by a minerally-rich acidity, sparkling and sharp, yet balanced by the softness of the fruit and the aromatic richness that only the unique terroir of the left bank of the Secchia River can provide. The finish, with almost spicy aromas, unfolds without ever losing its tension.

Winemaking

Each bunch is hand-selected and harvested into crates. Immediate soft pressing extracts and preserves the aromatic range of the original grapes. The free-run must is fermented in temperature-controlled steel tanks to develop the unmistakable character of our Sorbara grapes. The wines are then selected for blending and bottle-fermented for 60 months, followed by disgorgement and dosage. A minimum of six months' maturation is required before release.

Essence

Quintopasso Rosé Brut is the essence of Sorbara: fresh and sharp, uncompromising, balanced and made pleasant by a clean and unmistakable fruitiness. Tasting it transports us to a rarefied yet sensational atmosphere, a bit like being high in the mountains at sunrise, when, closing your eyes, you breathe in that crisp, crystalline air that smells of restrained elegance.

Pairings

The Quintopasso Rosé finds its ideal balance between acidity and finesse. It enhances the flavor of the Cantabrian anchovies, elegantly accompanies dishes of character such as cacio e pepe with raw shrimp, but also the great classics of the Roman tradition — carbonara or gricia. Its vibrant freshness adores vegetarian cuisine, where lightness and taste meet in perfect harmony.

The 2018 vintage, disgorged in October 2025, is a vintage that speaks of balance and light. 2018 he gave away Sorbara perfectly ripe, with a taut and luminous profile, ideal for the Classic Method production. The wine today presents itself with a pale pink and copper reflections, fine and continuous perlage, aromas that intertwine red fruits, citrus zest and light notes of bread crust.The mouth is clean, savoury, vibrant - a natural balance between energy and finesse, a stylistic feature of the vintage and of the Quintopasso philosophy.
